Cassenshof
Cassenshof represents a living family tradition and a deep commitment to quality food. Nestled in the idyllic Lüneburg Heath, this historic farm has been lovingly managed by the Voß family for 13 generations. Under ideal natural conditions, free-range and organic eggs are produced alongside flavourful potatoes and fresh asparagus.
With a clear focus on sustainability and regional distribution, Cassenshof offers a diverse selection of farm-fresh products directly from its fields. We proudly source our eggs and asparagus from Cassenshof, ensuring exceptional freshness and quality in our dishes. The farm also welcomes guests to seasonal harvest festivals, offering an authentic glimpse into rural life and agricultural heritage.
Gut Hesterberg
Gut Hesterberg is a family-run farm with its own butchery, dedicated to exceptional quality and sustainable food production. Situated around 60 kilometers from Berlin in the scenic Neuruppin region, the farm manages more than 1,000 hectares of agricultural and forestry land.
Its signature “Echt Havelländer Apfelschwein” (Genuine Havelland Apple Pig), produced exclusively for Havelland Express, is raised on a special diet enriched with apple pomace and kept in animal-friendly conditions with ample space to roam. The result is aromatic, finely marbled meat of outstanding quality.
All products are crafted in the farm’s own butchery manufactory using traditional recipes, natural spices, and authentic beechwood smoke. Complete transparency and traceability—from rearing to processing—ensure premium standards for the meat specialties served in our restaurant and the sausage selections featured at the breakfast buffet.
Müritzfischer
Operating under the brand “Die Müritzfischer,” Müritz-Plau Fishery GmbH is Germany’s largest inland fishing enterprise, blending long-standing tradition with modern innovation. Its fishermen uphold time-honoured fishing practices that preserve the heritage and romance of the craft, while the company simultaneously invests in advanced aquaculture and sustainable fish farming methods, supported by contemporary processing techniques.
As a hotel, we source our fish products directly from the Müritz fishermen, proudly supporting their responsible practices and ensuring exceptional freshness and quality for our guests.
Maison Kober (Käse Affineur)
Maison Kober has been a distinguished cheese affineur in Schleswig-Holstein since 1998, crafting exceptional cheese specialties with passion and expertise. Set in a rural landscape, the team maintains close relationships with local farmers, knowing every cow, every sheep, and every source of their high-quality raw milk. This milk is transformed into premium cheeses in their own on-site dairy.
The affinage process is carried out with meticulous care: each cheese is washed, turned, brushed, and refined with regional herbs and ingredients, including local apple liqueur that enhances the character of Northern German varieties. For our guests, we proudly serve Maison Kober’s organic cheeses, celebrated for their depth of flavour and superior quality.
For more than 25 years, Maison Kober has specialized in over 150 varieties of cheese, matured anywhere from four weeks to several months. Their aim is to highlight the distinctive personality of each cheese. Through collaboration with selected European partners, they offer a diverse assortment while ensuring that every cheese is individually nurtured and perfected.
